  • 1 turkey approximately 10 kg
  • 1½ kilograms of ground beef
  • 1½ kilograms of ground pork
  • ½ cup cooking oil
  • 4 garlic cloves, minced
  • 1 kilogram of tomato peeled and chopped without seeds
  • 1 tablespoon ground pepper
  • 40 pitted olives
  • 2 tablespoons capers
  • 50 grams of raisins
  • 50 grams of peeled and chopped almonds
  • ½ achiote bar dissolved in 1/2 cup of white or red wine
  • 1 pinch of salt
  • 1 bottle of white wine


The first thing you have to do to prepare the stuffed turkey is to clean the turkey and remove the guts the night before. Put the turkey under the water tap to finish cleaning all the remains that remain inside. Splash a splash of white wine on top of the turkey and leave it in the fridge overnight.

Take the turkey out of the refrigerator an hour before you start cooking. Preheat the oven to 200 ºC (400 F) and while the oven is heating, heat a saucepan or large skillet with the oil. When it is hot, brown the garlic, previously chopped.

Once the garlic is golden brown, add the ground beef, cook it until it is well fried and dry to make the turkey filling. Then, add the pepper, tomato, olives, capers, raisins, almonds and let it season well for 10 minutes to continue with the stuffed turkey recipe.

Now, fill the Christmas turkey with the meat that you just prepared with all the ingredients, and place it in a pavera or baking tray. Spread the stuffed turkey with the achiote dissolved in the white wine. We can also put some vegetables on the base so that they are done while the stuffed turkey is made.

Put the stuffed turkey in the oven and bake it for 6 hours. You must bathe it with its own juice every 20 minutes until the total hours are completed. After time, remove it from the oven and serve it as you like.

Cut the Christmas stuffed turkey with an electric knife or a serrated knife so that it cuts well. You can also serve it in a bowl with different vegetables or fruits at the base. And enjoy!
