Recipe developed by Ricco CI. 


  • 400 grams pork loin
    • 1 cup of soy sauce
    • 500 grams prunes
    • 1 white onion
    • 1 spoon of honey
    • 500 grams sweet potato
    • 90 grams unsalted butter
    • ½ cup brown sugar
    • 1 bunch of baby spinach
    • 100 grams of bacon


For the Prune Sauce:

  1. Put the prunes in a pot,
  2. Add the soy sauce, onion, little bit of water, brown sugar, honey, salt and pepper.
  3. Cook over medium heat for 10 minutes. Mix in the blender perfectly. Reserve.


For the sweet potato puree:
1. Peel and cut in cubes the sweet potatoes.

  1. Put the sweet potatoes, water, butter and salt in a pot.
  2. Cook over low heat for 15 minutes. Blend and reserve.



  1. Chop the bacon and baby spinach, sauté them in a hot pan and set aside.


For the Pork Loin:

  1. SEASON the piece of pork and put on the grill, cook the pork perfectly and let it rest before cutting.
